Roasted Pepper Dip

1 (12-14 ounce) jar of roasted red pepper
1 cup Walnuts, chopped
1 clove of garlic, peeled
1-2 teaspoons olive oil
1/2 teaspoon onion powder
Salt to taste
Food processor or good quality blender (Blendtec)

Directions:

Add peppers and garlic to food processor. Turn to puree
Then add the walnuts and turn food processor back on to make a paste
Add olive oil, onion powder, and salt. Puree all until you get the consistency you want
Serve with vegetable chips, GF crackers or fresh cut vegetables
